I always just use the command-line 'fdisk', issue a p (for print) then
a q (for quit) and that's usually enough for me. Check out /etc/fstab
too.

In my experience, I never defrag - if the filesystem is any good,
it'll look after itself just fine. If you defrag, then the close
packing makes it more liable to refragment, or so I believe. Never
defrag'd a Linux box, never had any problems.

I do it during install using the Disk Druid program. Make all the
changes you want, then they get committed during the install.
