Renaming busses is not yet possible with VoiceOver alone. For what it's worth, you can delete all busses, create new aux inputs and have the option of naming them which automatically creates a bus by the same name in order of availability. You can thus essentially name busses while creating Aux inputs, delete the aux inputs if you wish and save the I/O Setup for future use.
