Dear Krister,
if your cymbal track is already recorded, and you want to record the rest, I would advise you to do it on a different track assigned to the same MIDI port and channel. It would make no difference except that you would be able to manage both tracks separately. If you have already recorded the whole thing and you want to delete something, cymbals for example, the best thing to do is edit out the notes you want to get rid of. I don't know if ProTools has a way to delete a given note throughout a song.
