In terms of MIDI there is a book called 'Composing Interactive Music' by Todd Winkler http://books.google.co.uk/books?hl=en&id=GrwMuV4Jcw8C that is about using max, but the patches are pretty much interchangeable, you can open max patches in pd and vice versa, anyway it does deal with a lot of what I presume you mean; like taking 'live' data and extracting more data (tempo, chords, articulation of a keyboard performance for example) from it to control other processes.
mostly the max patches are explained/introduced well, and it should quickly become apparent where objects need to be substituted. The CD has all of the patches mentioned in the text. But all of those things are very possible with Pd. Maybe you should read up on the basic data-flow of patches, order of execution etc, and hopefully it should just 'click' at some stage and you realise that you can connect anything to anything else via some logic, and start building stuff. There's objects for a wide range of IO like eg. the Jack Transport object, but the help file has no info on how to use it, is that the problem, documentation?
