By the way, it's very unclear (to me at least) from the online doc how the persistence works. What if I renamed it to "home-rw" ? Should I then save manually all my settings somewhere ?

try naming it live-rw

you can change the lable without umounting it with tune2fs

something like tune2fs -L "live-rw" /dev/sdb2
