Dont use FreeBSD as storage server as the iSCSI implementation is quite bad.

Napp-it is a nice web gui for vanilla configuration but and will work on sparc 
with some small tweaks.

Is it mandatory to use those servers the way you wanted ?

Ultrasparc servers are nice machines,...but not for everything !
Instead of building poor perf windows VM with top servers; maybe you could 
(don't know about your cost limits) use thoses servers another way and buy a 
couple of (less sexy, i agree) Intel/amd64 machines where you could install 
proxmox 3.1 servers in order to use HA.

Your T2 could be turned into ...storage backend servers for your HA cluster ?
For instance : ZFS which is a wonderful FS.

Whether you choose FreeBSD or Solaris (the homeland of ZFS), you'll get a nice 
backend storage.
