Virtualizing the storage could drive you into perf issues or into non-easily solvable problems.
I love ZFS, really! (Rescued yesterday my wedding photos with the help of the great ZFS) But ZFS is neither built to be driven on crapy low-end disk-controller nor on (possibly) hard-to-debug virtualized disk controller, IMHO. If you want to backup your ZFS SAN/NAS, you should really have a look to the built-in solution (zfs snapshot, zfs send, zfs receive), instead of relying on whatever-copy-solution you want. But, i'd love to be wrong by discovering ZFS can handle this type of solution.
