Looks like pycountry also contains data files (which PyInstaller also
doesn’t collect by default). There’s a hook utility for that too (although
it’s odd we haven’t seen this sooner). Your hook becomes:
from PyInstaller.utils.hooks import copy_metadata, collect_data_files
datas = copy_metadata("pycountry") + collect_data_files("pycountry")
