Indeed, I am using linux 64 + eclipse (and I'm sure many others are as
well).  Unfortunately, I'm not sure how to help, as I basically just
followed the steps as posted in pymel's docs.  Not sure about 3.2 or
'easy eclipse', but eclipse 3.5's python interpreter setup page should
definitely have an environment tab.
Also, be aware for autocompletion for maya.cmds.* stuff likely won't work...
