I have somewhat mixed feelings about Wing for some of the reasons you listed. My primary issue concerns the menu bar, as it disabled the * cmd+shift+?* shortcut upon which I generally rely in cocoa applications to access menu items by type-in. Consequently, I have ended up using Eclipse predominantly. It has its own quirks, to be sure, and I don't know if it will do everything that you are wanting, but I would suggest at least checking it out.
