Revert "tests: Pin PyPy 3.11 to pypy3.11-v7.x (3.11.15)"
This reverts commit d5f3830f82381787d3b27d43b5bd31005b38f5d9.
Reason: PyPy 3.11 works again with current Pillow release,
but fails with pypy3.11-v7.x.
