For the records, also see https://www.mediawiki.org/wiki/Google_Summer_of_Code_2014#Automatic_cross-language_screenshots_for_user_documentation
Right, I just noticed it. I added Amir. ;) <https://www.mediawiki.org/w/index.php?title=Mentorship_programs%2FPossible_projects&diff=911241&oldid=911227>
This year's FOSDEM had a talk https://fosdem.org/2014/schedule/event/testing_documentation/ (refering to example code in developer documentation though, not screenshots) of the Padrino web framework project written in Ruby. They also use Cucumber and Selenium (automated interaction which could also be used to create visual documentation) for that.
We should probably continue polishing the description on wiki with any useful detail that is still missing.
