I run QGIS from ubuntugis repos and build master when the whim strikes me, like I want to check a new feature.
With handmade GDAL, the answer is a maybe, since you will still get pre-built geos, proj and QGIS, all of which will work with your custom rolled GDAL. So that's compiling 1 things instead of 4+ I haven't kept up with how to keep Mrsid and FGDB working but does that require a whole GDAL recompile? Mrsid used to just require a compile add-on. The other neat thing is the apt-get build-dep qgis which pulls in all the -dev libs you need for you. I think a virtual machine is a good way to keep up on master (and you can just use the qgis.org built ones) and still have a working stable build. You can easily share data mounts between.
