Hi Régis, Did you directly test WFS-T in QGIS-Server ?
I tested WFS-T in QGIS-Server 2.8 with QGIS 2.8 and WFS-T in Lizmap with QGIS 2.8. They worked well.
But I firstly have some ServiceExceptionReport because my Spatialite database was in a not modified directory. After changed the owner and right of the directory I didn't have trouble.

There are some caveats such as having a sequence in db's table as a primary key. I couldn't edit the very same layer from QGIS desktop (2.8.2 and master). I get a serviceExceptionReport error. Any idea, that would help us a lot here.
