I'd say a GREAT project would be adding support for point cloud data to QGIS + QGIS 3D. It'd be a lot of fun, you'd get to know a lot of useful libraries (like PDAL), you'd learn a lot about hot-topic technology, and you'd learn a lot about the internals of how QGIS (and other GIS) work. And you'd be adding a feature which is highly desirable to a huge number of QGIS users.
