The add button (plus icon) allows you to insert new waypoints. The route icon 
allows you to define a route based on way points. You can select a way point , 
track or route on the screen or in the list that appears on the left side.  You 
cans select either a waypoint, a route or track and delete them. You can select 
a way point and edit its coordinates. Once your edits are finished you can save 
them as the same or new gpx. Having that gpx you can: 

a) Load it to your gps unit.

b)load it in to QGIS and save either the routes, tracks or way points as shape 
files. Once they are a shape fiel you can edit them. To edit a shape just 
select it and togle to edit mode  (ble pen icon) which allows you to move 
nodes, create new nodes or points. That depend on what exactly what you want to 
do.

free, try EasyGPX. You can make your own list of waypoints and routes etc.
