In addition to what others suggested, be sure to visit the cloudmade.com website for pre-packaged OSM data per country. For example you can get all the OSM data for Dominican Republic, as shapefiles, here:

All the videos and training I find start from having the data accessible to the program. I feel once I get something to work with I will be away.
