No, that is not a problem If you are running Linux or Mac, GRASS and SAGA should be on your path, so there is no need to tell SEXTANTE where they are.
I haven't done testing in Mac, so I cannot tell you much more about why it is not finding GRASS...sorry :-( If you open a console and you can start grass, then you should not have problems. If not, make sure that GRASS is installed and in your path. Maybe someone with a Mac who has worked with SEXTANTE can help you more that I can...
