Hi Marie, Personally, I like the v.surf.rst function of GRASS which you can use through the Processing toolbox or the Processing Graphical Modeler. It produces rather smooth surfaces.
If you like a tin-based or IDW based interpolation you could use the interpolation plugin which comes with QGIS (maybe you have to activate it in the plugin manager, but it should come preinstalled with QGIS). If you want to work with break lines you probably have to do a tin-based interpolation as v.surf.rst does not allow for break lines. Furthermore there are more interpolation methods builtin into SAGA and GRASS you could try. Have a look at the GRASS and SAGA documentations. Hope this helps to get started.
