Unfortunately, with map units, there is no way to influence the way the symbol scales in the print composer. This is a missing feature/limitation. If you specified the symbol size in mm it would probably look ok in the print composer legend. I don't even know how one could solve this issue - a mapping between map units and mm, solely for the scope of the printed legend or legend in QGIS WMS server?
