Helllo abhijeet, To hide certain columns you need to go to the layer properties - fields tab. Then, for each of the desired fields, you can set the Edit Widget as Hidden.
To sort the attribute table by an especific column, all you need to do is click over the column name. First click will sort it descending, the second one will sort ascending.
