The "pseudo-layers" for categories in the legend tree are quite
new and haven't been fully polished for such cases.
I think it would be a very useful addition, being able to toggle
all categories of a layer.

With your current description I have no idea.
Are you talking about symbology? If yes - what renderer are
you talking about? Simple, Categorized, Graduated, rule based?
Or are you talking about the classes in the legend tree in
the "Layers" panel?
