That will vary on what level of licensing you have for ArcGIS. If you are on a Basic license then you will probably find QGIS will fill in quite a lot of gaps in your functionality. Off the top of my head these would include Erase / Difference geoprocessing and some proximity analysis. It will also vary accoring to any extensions you have licensed in Arc - so any route networking will be available (in QGIS if you have plugins and suitable data)) whereas in Arc you would need the Network Anlayst extentsion.
