I will bring up a Cross Over Ethernet Cable and a 8 port Gigabit switch and leads.

I think it should be easy to configure the Windows Laptop or my Linux Laptop to act as a server or gateway.

I don't have a crossover cable, but many modern ethernet PHYs can do the
equivalent internally. E.g. my netbook connects to my Q60 with a patch
cable.

Bridging should be pretty much an easy thing to configure.

Not for me, at least not under Windows. But good that you can do it.
