Tim, when the server hangs or freezes and you have top open, what is your load average? I've had the this problem on kernel 2.4 kernels with SpamAssassin installed and the problem was that I had to many incoming concurrent connections and my hard drives couldn't keep up with SA so the load average was hitting 200+ and the machine was just lock, or appear to be locked, simply unplugging the lan adapter and letting it sit for 10-15 minutes would result in a working machine. You might want to try reducing your number of incoming concurrent connections or temporarily removing SA from QS and see if the problem goes away.
