It's too easy.  Run invocations of tcpserver:

tcpserver eth0-ip-address 25 qmail-smtpd
RELAYCLIENT="" tcpserver eth1-ip-address 25 qmail-smtpd

This presumes that the eth1-ip-address is not routable from the Internet.
