You might consider using smtproutes if you only want to override 
DNS.

Try brackets: forward "$DEFAULT"@[195.30.221.30].

Your way - using $DEFAULT without quotes - is dangerous to say 
the least; what do you think a mail to
"someone; rm -rf *"@businessakademie.com
shall cause?
