Hi,
just put a line like:

:smtpserver.domain.xy

into /var/qmail/control/smtproutes. this would deliver ALL but local 
messages to server
"smtpserver.domain.xy". 

# chmod 644 /var/qmail/control/smtproutes 

to ensures, qmail-remote can read it.
