This is correct, but it is also beneficial to set 2 mx records, one is the
current ip and one the new ip. If this is done at least 24 hours before the
move, then mail servers on the net will look to both ip's to send mail. If
one is not available, they will try the other. Once the move is done, change
the mx back to the new ip only.
