I did not look at Your packages yet, but three things:

I do not see a qmail-run rpm, it seems, the qmail-packages sets up qmail
as MTA.
o You included man-pages in daemontools and ucspi-tcp packages. Put them in
extra packages.
o there allready are qmail rpms?
