No you can't change it, as it's compiled in.  But you can work around it.
Make dns.domain.com an alias domain to domain.com.  Or, put dns.domain.com
in the /var/qmail/control/locals file, then put &[EMAIL PROTECTED] in
/var/qmail/alias/.qmail-postmaster
