I used to have a qmail installation but it was wrong so before running
the toaster I deleted all the contents of /var/qmail. Could this be the
problem?

qmailtoaster itself is not on that list, which means it did not
compile. Be sure you have removed sendmail, as that will stop the
install. otherwise, run the compile script again and pipe your output
and stderr to a file. Then look back and see what errors you are
getting, there are obviously some, now you just need to figure out what
they are and resolve them.
