Error connecting to IMAP server: localhost.
                           13 : Permission denied

Did you reboot after the install? Did you create the cert via the command line? 
cd /usr/share/ssl/certs/
   make stunnel.pem
(and then link the cert)

If yes to all of that, what do the tails of your logs show? The imapd log would be a good start.
