I think is should be work by just remark it. i.e.:

#System authorization infomation
auth --useshadow --enablemd5
#Network information
#network --bootproto=dhcp --device=eth0
#Firewall configuration
firewall --disabled

And for qmail installation,
How about in the ISO there is a folder where the current QT is available.
and before compiling there is a prompt asking like "Would like to look for
Qmail Toaster Update?"
If yes it download the new QT packages, maybe you can use
current-download-script2.sh by  "Johannes Weberhofer, Weberhofer GmbH"

so if users done have Internet connection or just for testing labs still
can install QT, if you not including current QT when releasing QMT-iso it
just plain CentOS  which ready to install with QT

just my suggestion...
