I'm also hosting my QMT on VMware ESX 3.5 using iSCSI disks and love it. I'm running about 20 Virtual servers on 2 hosts - each has 2 Quad Core Xeon CPUs and 24GB of DDR2. If 1 host dies I can run all VMs on a single host. Easy to backup/snapshot/etc.
