If security's the concern, simply (re)move the /var/qmail/supervise/*
directories for the services you don't want to some place else (as a
backup), and then they won't run. That should take care of any security
concerns.
Leave send, smtp, and spamd directories there, and you should be good to
go (ttbomk).

build it down.
