You know, I've always thought that the way Outlook sends was sort of a
cheat. Outlook 'sends' to it's Outgoing folder, which is fast. It then
does the actual send and copy in the background. Outlook still needs to
be open though in order to complete the transmission though. I wouldn't
go so far as to recommend using Outlook (it has its own set of
challenges), but it would certainly give the appearance of being faster.

Personally, I like to see and know that the message has actually been
sent, regardless of the time it might take.

understand these are two different processes.

Short answer: no.
This is largely a client side function, and has little to do with the
server. Regarding the little that is done by the server, the sending
process is totally separate (goes to different program on a different
port) from the saving a copy function. Bringing them together would be
a huge undertaking.
If you're using TBird with pop, the sent folder resides on the client,
and the server doesn't even come into play. If you're using TBird with
imap and need to speed up the copy to sent folder, you might try using
Dovecot in place of Courier. Dovecot performs generally better than
Courier, but I'm not sure how much improvement (if any) you'd see in
that area.
I'm wondering, why are you waiting for the message to be sent and
copied? Can't you simply proceed to do something else in the meantime?
