The backup and restore scripts backup the user's mail, the database, and
your config files.
To restore, install a fresh QMT installation and run the restore
script. It will restore the above items.
If you only wish to back up the mailstore, then you only need
/home/vpopmail/domains (you can drill this down to a specific domain or
even user if you want).
