SED stands for Stream EDitor. It's been part of *nix variants for a long
time. It's quite capable of doing a find and replace type of
modification you're needing to do.
I have the O'Reilly "sed & awk" book myself (for many years). You might
use google to find a tutorial. Also, have a look at the
qtp-install-spamdyke script. There's a little sed scripting in there.
Might be some in other qtp scripts too.

You might pass the messages through sed in the delivery process to
remove the tag. Add the sed editing script in the the .qmail file
(which controls delivery) for the catchall account.
