It depends on what you're trying to accomplish. If you want to skip SA
scanning entirely, which would eliminate a good deal of processing, I'd
modify the /var/qmail/control/simcontrol file to specify spam=no. This
would turn of SA scanning.
If you still want to scan so that you get a scoring header in the
message (which some clients can filter based on), but simply do not want
to change the subject line, then I think you would simply comment out
(or remove) the line:
rewrite_header Subject ***SPAM***
I believe you'll need to restart spamassassin after changing the
local.cf file, like so:
# qmail-spam restart
