SA did score it at 3.25 and my SA is set at 5

increasing the scoring of rules that did fire, or using sa-learn with
the bayes database to learn what's spam. I use the later method.
Which SA do you have set at 5? I have spam_hits (simcontrol) set at
5.1, and required_score (local.cf) set at 3.7, FWIW.
+1 on bayes. My favorite antispam tool outside of Spamdyke.
Also look into the freemail_from plugin for SpamAssassin.
