I have the users I consult use the email client--Thunderbird, etc...--to
move all mail marked as spam (***SPAM***) to the folder of their choice.

There is a checkbox in TB to recognize spamassassin headers, so you don't need to filter based on the subject.

Generally speaking, at this point in time, it's probably best to let the clients do the filtering. There is however a "Spambox" option that can be specified with qmailadmin builds, which will do server side spam filing.

Just FYI, in the long term QMT will be using dovecot, along with its delivery software, which supports sieve language server-side filtering. There is a web based app that allows users to maintain their server-side filter rules, and IIRC TB has a plugin or something that supports sieve on the server.
While we're on the subject - just thought I'd share my woes - I managed to nuke my test VM which had dovecot+LDA and sieve implemented. I guess I'll have to find the strength of character to build that again. On the other hand, this time I'll probably get around to documenting / packaging it properly :)
