We had a similar issue and switched to Thunderbird. Test it out on one machine to see if it makes a difference. From what I understand Microsoft does not follow IMAP RFC. Also, switch to Dovecot <http://wiki.qmailtoaster.com/index.php/Replacing_Courier_IMAP_with_Dovecot_IMAP>, it's VERY simple.
