Edwin, IMHO, yes, CentOS 6 is stable. I'm using it in production. I think it would be a good idea to add it to the wiki.
However, I'm not sure of the wiki's status. Someone's paying for the domain name, I'm not sure who that is or how long he/she will be doing so.
