This little tutorial describes how to use the low-level API's of qooxdoo. These are mainly the "qx.bom" and "qx.dom" packages together with the event layer. The UI layer (and the widgets) are not integrated in this pre-defined qooxdoo build. I just pointed you to this little tutorial to show you that the tool-chain is capable of creating qooxdoo builds with defined a function set. Sorry for the misunderstanding. The script crashes because the class "qx.ui.control.DateChooser" is not part of the built JS file (it has a defined function set -> look at the "config.json" file at the "include" key)
