Hello again,

depending on the version you use, a setting for setting the canvas and
page background colour is available in the settings dialogue under the
"Graphics" category, but setting the font colour is not since the
drawing of text is exposed by the PDF rendering process.

Concerning the book readers, this might be possible with other formats
like ePUB that offer more structured access. But PDF is a format that
aims for reproducible output, so the options for manipulating the
different kinds of page content are not a priority. (Even the changed
background might fail for pages that contain their own background, e.g.
scanned documents.)
