Thanks for everyone's input. This has certainly been an intriguing event.
I'm up and running now. The problems were
-s instead of -S in the xinetd.d/pop3 file
My /etc/mail/relay_domains wasn't configure correctly
telnet localhost 25 and telnet localhost 110 work fine.

by running: netstat -vlnp |less
