You can use daemontools to do that, yes.
Or you can just use standard rc-scripts to start and stop
qpsmtpd-forkerver and hope it doesn't crash. My RPMs do it like this (I
didn't want to add a dependency on daemontools), and I think Devin's
debian packages, too.
