The most stabile one I met was the Apple Upgrade Card, making a PowerMacintosh 800 out of the Quadra 800. You'll get a PPC 601 running at 66MHz. Runs great at OS 8.1 . OS 8.6 is possible with a hack, but wouldn't advise that.
