This could also be a video capture card. Mass Microsystems made the
"QuickImage" capture card for NuBus Macs, which I used for capturing stills.
So, the RCA jack could be IN rather than OUT.
But, that's all I've got on the topic. Finding software could be difficult.

with an ID
(model no.?) of G 2S3MDMMEV8.
